Miss Jessie’s Sweet Potato Casserole Recipe

 3 cups of sweet potatoes

1 cup of sugar

2 eggs

1 tsp of vanilla

1/2 evaporated milk

1/2 cup of butter

Using mixer , beat eggs lightly.

Add sugar, potatoes, milk, vanilla and butter

Pour into a lightly greased baking dish


Topping

1 cup of light brown sugar

1/3 cup butter

1/4 cup of flour

1 cup of pecans

Mix thoroughly and sprinkle over casserole before bakingBake at 350 for approximately 30 minutes or until nuts are brown.  Top with marshmallows and put back in oven to lightly brown.
